Hippity hoppity Easter’s on its way and with it comes Easter brunch! Yes, there’ll likely be chocolate bunnies and eggs and jelly beans and whatnot, but after the parade of pastel dresses and bonnets and such (yes, I’m channeling the many Easter Sundays of my 1970s youth) there’s brunch or lunch or dinner to feast on. Brunch is ALWAYS my first, second and third choice. How can any other meal compete with a tasty mix of breakfast and lunch served with cocktails? Here are a few a dozen of my favorite Easter brunch recipes that will knock your Easter socks off! (You know, the frilly ones with the ruffle around the ankle, 😉) Pick a few or make them all for an Easter feast like no other!
Easter Brunch Recipes
Lemon Chive Cucumber Sandwiches
Lemon-Chive Compound Butter jazzes up cucumber sandwiches.
Asparagus-Topped Deviled Eggs
Serve these deviled eggs on this cute Easter plate.
Smoked Salmon Flatbread
Bagels and Lox (or Smoked Salmon) with a schmear of cream cheese, red onions, capers and dill is a breakfast/brunch staple. It’s one of my favorite things and when I like a thing, like really, really like a thing, I want it all. the. time. So, I got hungry and piled these favorite things on toasted, leftover flatbread and this delicious appetizer was born!
Crisp Waffles
Light, crisp waffles are my favorite kind of waffle. I love to hear that telltale crunch when I take a bite of one and it’s still crisp after I’ve drowned it in maple syrup or berries and whipped cream or if I’m feeling crazy, all three.
Brown Sugar & Spice Bacon
This just may be the best thing I’ve ever cooked. It’s at least in the top five. Bacon is always tasty but rub it with a blend of light brown sugar and ground chili powder and it bakes into a crispy, smoky spectacular. If sweet and savory float your boat, Brown Sugar Bacon is for you.
Crabcakes with Hollandaise Sauce
These crab cakes are the highlight of any menu. They’re light, flavorful and simple to prepare. Serve them with our Blender Hollandaise Sauce and Asparagus & Red Pepper Slaw for a special meal.
Zucchini & Tomato Flatbread
This flatbread recipe is so simple and my favorite part is you can assemble it or make it ahead!
Veggie-Stuffed Portobellos
This is the perfect recipe for brunch, light but filling and gorgeous to look at!
Hasselback Tomatoes with Goat Cheese & Herbs
Hasselback Tomatoes are dinner party perfect, as you can slice and stuff them hours ahead, store them covered in the fridge, and bake them when you’re ready to serve. You’re welcome!
Asparagus and Red Bell Pepper Slaw
Shaving the asparagus and bell pepper takes a little time, but it’s well worth the effort. They combine to create a dish that is a direct reflection of spring — crisp and refreshing. You can — and should — make this ahead. It’s better the next day.
Strawberry Shortcakes
You won’t believe how easy it is to mix up a batch of shortcakes from scratch!
Lemon Cardamom Snickerdoodles
Lemon and a sprinkling of ground cardamom brighten up the traditional snickerdoodle.
Watergate Salad
This dessert salad is an edible time capsule of my childhood. Marshmallows and Cool Whip for the win!
Raspberry Champagne Cocktail
This Raspberry Champagne Cocktail is simple to make, delicious to taste and it’ll make a gorgeous addition to your Easter table.
