To aid you in your entertaining efforts, I’m pleased to present a trio of recipes that will fit the circumstances many in our country currently find themselves in. Let’s get this party started!
Thankfully, there’ll be no need to raise your debt ceiling with this menu of fiscal cliff-proof finger foods that can be pulled together quickly with items that are likely waiting patiently for you in your pantry or fridge. Simple? Check. Cheap? Check. Tasty? Double check. Sounds like a coup to me.
Sweet & Spicy Roasted Chickpeas (or Chickpeas for Change)
This just might be the perfect snack! Crunchy, slightly sweet, salty and a cinch to make with staples you likely already have in your pantry. A few spices and a half hour or so in a hot oven and chickpeas morph into the perfect party snack.
Mini Toasted Turkey & Mozzarella Sandwiches (So Help Me God This is Good Grilled Cheese)
Tomato and mozzarella are a classic pairing. Throw in a little spicy mustard, turkey and red onion and you’ve got a deluxe grilled cheese in miniature. Don’t have a baguette handy? No problem. Slices of toast cut into quarters make an excellent substitution.
Thai Tuna Salad (or 47% Better Than Regular Tuna Salad)
Tuna salad on a buttery cracker has always been a favorite low-key treat and I love-love-love an appetizer or snack you can make in minutes. This Spicy Asian Tuna Salad gives me both in one (or two) delicious bites.
