Switch Up Your Salad Greens – Honoring Dr. Seuss

Green Eggs & Ham by Dr. Seuss is still my favorite book of all time. It made me want to read, write and try everything (at least once). My post today honors Dr. Seuss…and Spinach!

When choosing greens for your next salad
Think outside the crisper.
Iceberg lettuce is all well and good
But not the only salad-fixer.

Our salad plates are now diverse
Iceberg’s not all we’re stuck with.
It’s not the only lettuce
That from the produce section cometh.

In addition to more flavor
other salad greens possess,
Darker greens hold more nutrition.
They’re better for you more or less.

Trade your iceberg in for spinach
It’s a tiny price to pay
To fill your diet with Iron and Calcium
And Vitamins B, C, E & K.

There are three key kinds of spinach –
Baby, Smooth Leaf and Savoy.
With antioxidants and phytonutrients
That you’ll certainly enjoy.

When salad’s on your menu next
Try tossing in some spinach.
You can find it year-round anywhere.
You don’t have to go to Grin-itch.
