Roasted tomatoes and a garlicky mayo make this the the ultimate BLT.

Slice tomatoes and toss with olive oil, garlic, oregano, salt and pepper.

Bake 20-25 minutes or until edges begin to brown. Remove from baking sheet and let them cool.

Mix mayo with garlic, parsley, tarragon, basil, lemon juice, salt and pepper.

Spread the Garlic Herb Mayo generously on your favorite toasted bread.

Top with arugula, or your fave green, bacon and roasted tomatoes.
