3 Super Summer Salads

The best part about summer – besides these summer salads and sun and sand (if you’re lucky) – is the delicious bounty of fresh fruit and produce readily available at farm markets in your neck of the woods. What better way to enjoy all of that fresh produce than in a super summer salad? I love salad all year round, but seriously, these three are like summer on a plate. Bonus – you get a mouthwatering dish without even turning on the oven. Score! Let me know which one’s your favorite. I can’t decide so all three will be on heavy menu rotation in my house this summer.

Three Super Summer Salads

Classic Wedge Salad

Iceberg lettuce, the long-maligned and under-appreciated salad green is in vogue once more and with it, the Classic Wedge Salad. A thick wedge of iceberg lettuce topped with diced fresh tomato, crumbled bacon and a creamy blue cheese dressing.

Shaved Cucumber & Radish Salad

Radishes are one of those veggies people don’t know what to do with. Cabbage’s peppery cousins are oddly shaped with a distinct bitter flavor that can be offputting for the unadventurous eater. They grow in a variety of colors from pink to purple, yellow and green, but the bright red orbs with the creamy white center are most common in the the U.S. Though they’re available year round, radishes are one of the first veggies to sprout in spring and I love pairing them with mild, crunchy cucumbers.

Cucumber & Tomato Salad with Red Onions & Feta

Cucumber and tomato are a summertime staple around here. My husband would eat cucumbers in some form or fashion with every meal if he had his way. And I can’t blame him. They’re crisp, refreshing and cool and with just a pinch of salt and pepper they’re the perfect warm weather snack and a tasty addition to this salad!
