Jamaican Festival Doughnuts

Ingredients

¾ cup flour
¾ cup cornmeal
1 tablespoon butter, softened
1 teaspoon baking powder
¼ cup sugar
Pinch nutmeg
½ teaspoon salt
½ cup water
1 teaspoon lime juice

Canola or vegetable oil, for frying

 

Instructions

Combine the flour, cornmeal, butter, baking powder, sugar, nutmeg and salt in the bowl of an electric mixer. Gradually add the water and lime juice, mixing just until a slightly sticky dough forms.

Heat at least 2 inches of canola oil to 375 degrees Fahrenheit in a large pot.

Roll the dough into small sausage shapes, about 2-inches long and add to hot oil. Fry the festivals until golden brown. Remove from oil and drain on paper towel-lined sheet trays.
