Cassia, which is what’s found in most stores, has the bold, spicy flavor we know and love. True cinnamon is softer — the sticks can be crumbled by hand — and has a slightly sweeter flavor. Both work wonderfully in sweet and savory dishes.
Cinnamon is high in antioxidants — 1 teaspoon has as many as 1/2 cup of fresh blueberries — and it contains calcium, iron and fiber.
Add cinnamon to dishes a little at a time. It has a big, strong flavor and a little goes a long way.
