Cinnamon

Cinnamon is the ultimate spice. I’d wager that if you asked a room full of people to name a spice, the survey would say cinnamon was the most popular choice. It’s available ground or in sticks.There are more than 250 varieties of cinnamon and they’re all made from the dried bark of tropical trees. The most common types of cinnamon are cassia and true cinnamon.

Cassia, which is what’s found in most stores, has the bold, spicy flavor we know and love. True cinnamon is softer — the sticks can be crumbled by hand — and has a slightly sweeter flavor. Both work wonderfully in sweet and savory dishes.

Cinnamon is high in antioxidants — 1 teaspoon has as many as 1/2 cup of fresh blueberries — and it contains calcium, iron and fiber.

Add cinnamon to dishes a little at a time. It has a big, strong  flavor and a little goes a long way.
