Besitos de Coco – Christmas Cookies from Around the World
Serves: 18 cookies
  • 1 7-ounce bag shredded coconut (about 2 cups)
  • 1 cup water
  • Pinch salt
  • 1½ cups dark brown sugar
  • teaspoon vanilla extract
  1. Stir coconut, water and salt together in a medium pot. Cook over medium high heat until the water boils. Stir in the brown sugar and reduce heat to low. Cook, stirring occasionally, until almost no liquid remains in the bottom of the pan and the mixture becomes thick and sticky, about 25 to 30 minutes.
  2. Allow the mixture to cool, then either roll them into2-inch balls or drop them by rounded teaspoonsful onto a sheet tray lined with parchment paper. The cookies will firm up as they cool.



  1. Had a really hard time with this recipe. They would not bind no matter what. I will try the besitos de coco that are baked.
